Pairing the Perfect Slice at Pie Bar

While everyone was baking cupcakes in 2011, Carson McCabe was thinking about pie – selling mini pies to be specific – but was running into one particular problem. He couldn’t find the necessary tins for the miniature desserts. But while searching the aisles of Dollar Tree with his mother one night, he spotted rows of martini glasses, wine glasses and shot glasses and had an interesting thought.

“We had this idea,” he said. “You could put the crust in, the filling in and it looks cool. You could do it like a pie bar.” And thus, one of Lubbock’s favorite sweet shops – The Pie Bar – was born.

Since opening in 2011, armed with family recipes and 25 flavors, Pie Bar has completely reinvented the way the “Hub City” thinks about its pie, serving up deconstructed (but equally delicious) versions of our favorite pies in various forms from Pie Shots to Pie Bites and even Pie Flights.

Fast forward to 2017, Pie Bar now serves up a whopping 65 rotating flavors at two different Lubbock locations, and just when we thought this local favorite couldn’t get any better, we discovered they have added some of Lubbock’s award-winning wines to the menu. So we stopped by for a few tips on what to sip with each slice. Here’s a quick look at a few of their recommendations.

Red Velvet Pie Shot + McPherson Sangiovese
It’s not on the menu, but next visit try ordering up Pie Bar’s “Double Shot” – 2 ounces of wine paired with a 2 ounce Pie Shot. We recommend giving the Red Velvet and the McPherson Sangiovese combo a try.

Hot Apple Cobbler Pie Bite + McPherson Viognier
This local light-bodied, dry white is a Pie Bar favorite especially when paired with the Hot Apple Cobbler Pie Bite. (Hint: Hot Apple Cobbler is one of Pie Bar’s top sellers).

Death By Chocolate Pie Slice + Llano Estacado Winery’s Montepulciano
Death By Chocolate is by far Pie Bar’s most popular by-the-slice pies. Made from a chocolate batter crust, layers of white chocolate and dark chocolate mousse and topped with a chocolate ganache, it’s a chocolate lover’s dream. Pair with the Montepulciano for an extra-indulgent dessert experience.

The only rule at Pie Bar is that everything from crust to filling must be made from scratch. Our only rule for going to Pie Bar is experimentation – trying something new with each visit. Whether you decide you’re Oreo all the way or prefer peanut butter cup to cherry cobbler, there’s something for all tastes and, now, a wine to go with it. Happy pairing!
